Candied Sweet Potatoes with Marshmallows–Printable Version

Candied Sweet Potatoes with Marshmallows

Ingredients:

-2 or 3 large sweet potatoes/yams

-Nonstick cooking spray

-1 teaspoon cinnamon

-1/3 cup brown sugar

-4 tablespoons (1/4 cup) butter or margarine, separated into small pieces

-1/2 bag of marshmallows (about 18 jumbo puffs or equivalent amount of mini-marshmallows)

Directions:

Preheat oven to 375 degrees. Peel two or three large sweet potatoes and slice them into 1/2- to 3/4-inch-thick round discs.

Boil or steam the sweet potato discs for about 15 minutes or until tender.

Place softened slices in a 9″ x 12″ greased/sprayed baking pan and sprinkle with cinnamon and brown sugar. Place several dollops of butter on top of the sugared potatoes.

Top the mixture with half a bag of marshmallows. Place in the oven (uncovered) for 15-20 minutes, or until marshmallows begin to brown and melt. Remove from oven and serve immediately or store covered to microwave leftovers.
