Cheap Recipe: Candied Sweet Potatoes with Marshmallows

Most people have their own opinions about what constitutes a good sweet potato dish–some like pureed casserole with pecans, some like it in a pie, others like plain bakes sweet potatoes–but at my house, sweet potatoes are always served with sweet syrup and baked marshmallows.

It’s gooey, it’s sticky, and it’s probably a heart attack waiting to happen, but dang is this recipe satisfying!

Preheat oven to 375 degrees. Peel two or three large sweet potatoes and slice them into 1/2- to 3/4-inch-thick round discs.

Now, you can either boil these discs in water for about 15 minutes or until tender, or

you can use my personal favorite invention from the last five years–Ziploc Steamers bags. They are fantastic. You just throw raw veggies in them, microwave for a short time (much less time than it would take to tenderize them via stovetop!) and voila! Cooked vegetables with no added water or messed up dishes! A whole steamer bag of potatoes cooks in seven minutes, start to finish!

A box of ten Ziploc Steamers bags (available in different sizes) is about three dollars at my local grocery store, and worth every dime if you ask me. I

 haven’t seen them at ALDI or Save-A-Lot, but if you’re headed to a regular chain store anyway, you may want to pick some up!

Anyway, the moral of this story is…steam the sweet potato slices until mostly tender.

Place steamed slices in a 9″ x 12″ greased baking pan and sprinkle with 1 teaspoon cinnamon and about 1/3 cup brown sugar. Place several dollops of butter on top of the sugared potatoes.

Top the mixture with half a bag of marshmallows (about 18 jumbo marshmallows or equivalent mini-mallows). Place in the oven (uncovered) for 15-20 minutes, or until

 marshmallows begin to brown and melt. Remove from oven and serve immediately or store covered to microwave leftovers. These babies reheat perfectly!
