Gooey Three-Way Applesauce Puffs

Ingredients:

-1 regular-sized box dry white cake mix

-1 (24-ounce) jar applesauce

-Part of a can of prepared cream cheese frosting, optional (or can substitute sprinkled powdered sugar or cinnamon topping)

Directions:

Preheat oven to 150 degrees. In a large mixing bowl, combine contents of dry cake mix with whole jar of applesauce (equivalent to about 2-1/4 cups applesauce). Do not add oil, water or egg.

Stir batter well, remembering that there will still be a little lumpiness to the finished batter because applesauce is not as smooth as water/oil/egg.

Divide batter into 12 (sprayed or lined!) cupcake/muffin cups. Bake approximately 25-30 minutes; begin checking around 20 minutes. Finished cupcakes will be golden on top and inserted toothpick will come out clean.

Cool in pan briefly before transferring to wire rack or refrigerator to completely cool.

For FAT-FREE variety cupcakes, sprinkle cooled cakes with powdered sugar or cinnamon and serve.

For traditional-looking cupcakes, pipe cream cheese frosting onto the tops of cooled cupcakes.

For frosting-filled cupakes, insert frosting decorator’s tip down into the center of cupcake and squeeze hard while slowly pulling first-around-then-up. The tops of “filled cupcakes” should “move” slightly as you squeeze the frosting tube, indicating when the cupcake is filled.
