3 green onions, minced finely
1 fresh chile pepper (serrano, jalapeno, etc.), minced finely, or 1 small can chopped green chiles
2 cans blackeyed peas, drained
1/2 c. Italian dressing
Fresh Roma tomato, diced, or 1/2 can diced tomatoes
1/2 bell pepper, diced
1 tbsp. taco seasoning
Cumin to taste
Seasoned salt to taste
Combine all ingredients in a large bowl. Mix thoroughly, cover, and let rest for several hours to allow flavors to blend. Serve with tortilla chips.
