“Moon Over My Spammy” Skillet Sandwiches

Chef’s Note: I made our egg sandwiches with two slices of SPAM + two slices of American cheese each, since we were having breakfast-for-dinner and I wanted the sandwiches to be extra-filling. Nonetheless, they would have been plenty filling with half the amount of SPAM and cheese on each sandwich, so prepare according to your own preferences (and determined by the amount of people you’re dividing that can of SPAM among!).

Ingredients:

-8 (or 16 ♥) slices thick bread, toasted

-Butter (to taste)

-1/4 cup brown sugar

-1/2 cup apple (or other variety fruit) juice

-(1) 12-ounce can SPAM canned meat product

-4 (or 8 ♥) eggs

-4 (or 8 ♥) slices American cheese

Directions:

Begin by heating two greased skillets over burners–a smaller skillet over MEDIUM-LOW heat and a larger, deeper one over MEDIUM-HIGH heat. Toast and butter eight (or sixteen♥) thick pieces of bread.

In a spouted measuring cup, combine 1/4 cup brown sugar with about 1/2 cup juice; stir well.

Open a 12-ounce can of SPAM luncheon meat; drain or pat dry. Slice on the wide angle into 8 thin pieces about the size of American cheese slices.

Into larger heated skillet, place as many meat slices as you can in one layer (you may have to repeat this step if they won’t all fit in one round). Immediately pour the sugar/juice mixture over the heating meat and allow to simmer for several minutes on each side.

Meanwhile, in smaller greased skillet, cook four (or eight, see above note ♥ about portions) eggs separately any way you like. (We eat ours over-medium, hence the moon reference–they aren’t sunny-side-up if you flip them in their whites.)

As meat and eggs simmer, place American cheese slices over the hot buttered toast to let them start warming/melting. Use spatula to lift SPAM and eggs out of skillets and layer over warm cheese slices. Serve immediately garnished with orange slices or fresh tomato.
