Diabetic Truffles

Ingredients:
– One 7-oz. box sugar-free instant chocolate pudding mix
– One 8-oz. package cream cheese, softened
– 1/2 c. finely chopped nuts

Directions:
Use a fork or pastry blender to mix pudding and cream cheese. Form mixture into small balls (about 1 inch in diameter) and roll in nuts. Makes about 20 truffles.
