Easy Recipe: Broccoli Casserole

Easy, cheap, and loaded with nutrients -- what more could you want?

Most casseroles are designed to be warmed up in the microwave. This one is made entirely in the microwave and can be thrown together in 15 minutes or less — perfect for nights when you’re in a hurry and need to get dinner on the table fast.

Start by putting a pot of water on to boil. Once it’s rolling, throw in a bag of that boil-in-the-package Minute Rice.

Cook the broccoli until it looks pretty.

While the rice cooks, steam a bag of frozen broccoli florets in the microwave. Some brands can be steamed right in the bag; otherwise, just put the frozen broccoli in a covered dish with a tablespoon or so of water and nuke it for four or five minutes until it’s bright green and heated through.

Add a dash or two of red pepper.

Dump the cooked rice into a smallish casserole dish. Drain the broccoli if necessary and add it to the rice. Throw in a can of mushroom soup and a handful of shredded cheddar and sprinkle with a dash or two of ground red pepper. Stir everything together, cover, and stick it back in the microwave for two or three minutes to melt the cheese.

This is kind of a lazy variation on Mollie Katzen’s “Enchanted Broccoli Forest,” from the cookbook of the same name … except it involves way less effort and doesn’t look quite as pretty when you finish.
